Juicy turkey meatballs with tasty basil tomato sauce

Just a note- I used different kinds of basil for this recipe, mainly because I have them growing in the garden- but you can just use normal basil for everything and add a bit of lime zest to the meatballs instead.
Ingredients:
Turkey meatballs:
500g turkey mince
3 spring onions, finely chopped
2 kaffir lime leaves, ground in a spice grinder (or finely chopped)
1 tbsp finely chopped Thai or Lemon Basil
2 cm piece ginger, peeled and grated
1 red chilli, deseeded and finely chopped
1 egg
40 g fresh bread crumbs
salt and pepper to taste
2 tbsp olive oil for frying
Sauce:
300g ripe tomatoes, chopped
300g cherry tomatoes
2 tbsp basil
1 tbsp purple basil
1 onion
1 clove garlic
a pinch cayenne pepper
about 1/2 cup chicken stock
1 tbsp olive oil
Method:
mix all the meatball ingredients together with your hands until well combined, then form the meatballs, about 50 g each (makes about 12). Put on a plate, cover and refrigerate.
Sauté onions on medium heat in 1 tbsp olive oil until translucent, add the garlic and fry for another couple of minutes. Add the chopped tomatoes and cook until they break down slightly. Add 2-3 tbsp chicken stock, cayenne, half the chopped basil and salt and pepper. add more chicken stock if needed. add the cherry tomatoes and cook for another 2-3 minutes, adding a bit more chicken stock if needed. Turn the stove off and put a lid on the pan.
Fry the meatballs in a non-stick frying pan until golden and cooked through.
Serve on rice with the warm tomato sauce. Enjoy!
